2 cups white whole wheat flour
6 Tbsp.coconut oil (warmed a bit to soften).
3 Tbsp. salt
3/4 cup warm water
In a bowl, mix together the flour, oil and salt.
Slowly add the warm water until a rough dough forms. If needed, add a little more warm water.
Turn dough onto floured counter and knead for 2 minutes. Return to bowl and rest for 20 min.
After 20 minutes divide dough into 8 pieces.
Roll out each piece of dough with rolling-pin until thin.
Heat a lightly greased pan over medium heat and cook for about 1 minute till bubbles appear.
Flip over and cook for another minute. Hold down spatula if needed to flatten.
Repeat with all remaining dough.
Use immediately or store in air tight container in fridge or freezer. It’s always a good idea to make a double batch. One to freeze and one for the fridge.
